Cleaning: Before cooking beans, be sure to clean them. Place the beans on a cookie sheet. Pick out the rocks, mud and bad beans, and throw them away.
Soaking: Soaking dry beans reduces the cooking time by helping to soften and return moisture to the beans. It helps to ensure great taste and beautiful beans. Beans can re-hydrate to triple their size, so be sure to use a big enough pot! There are two popular methods for soaking beans.
1. Preferred Hot Soak and Quick Soak Methods — Hot soaking helps dissolve some of the gas-causing substances, making the beans easier to digest. For each pound (2 cups) of beans, add 10 cups hot water; heat to boiling and let boil 2 to 3 minutes. Remove from heat, cover and set aside for at least one hour (Quick Soak), or up to 4 hours (Hot Soak).
2. Traditional Overnight Soak — For each pound (2 cups) of beans, add 10 cups cold water and let soak overnight, or at least 8 hours.  Cooking: Drain off and discard the soaking water ~ this will not affect the nutritive value of the beans, and may actually help to eliminate factors in the beans which make them hard to digest
